Grilled Pineapple with Coconut Ice Cream

  • 1 pineapple, thickly sliced

  • 1 tbsp coconut flavoured liquor

  • 2 tbsp brown sugar

  • 1 cup toasted shredded coconut

  • Coconut ice-cream

METHOD | Cook Time 15 mins

Step 1
In a large bowl, add pineapple slices, liquor and sugar, combine till pineapple slices are fully coated.

Step 2
Heat your Euro BBQ grill to medium-high, and grill pineapples until golden on both sides

Step 3
Serve up pineapple slices with a generous scoop of coconut ice-cream or any ice-cream of choice and enjoy!
